Steak might be seen as a manly dish that makes the perfect meal for Father's Day to spoil the loved men in your life, but a good steak that melts in the mouth can certainly be enjoyed by the whole family.

The peppercorn sauce may sound way too fiery, but it's actually it's pretty mild, even for a palate like mine that doesn't quite deal well with spiciness or overly spiced dishes. It certainly does have a kick, but it compliments the beef so well, that I can't possibly find a better sauce to go with it.

You can leave it as a low-carb dish to be served with a good green salad on the side, but if you'd like to go for a hearty pub food, then pairing it with creamy mashed potatoes and peas makes the perfect sense here.

The fillet steak I used was thinly sliced, so it took only a couple of minutes to be ready - it all depends on the thickness of the fillet, and also how you like your steak done - I prefer mine well done, but do go for however you like it, either rare or medium done.

Just drizzle a bit of oil in a frying pan, season the sauce with salt and pepper, and cook on both sides, then remove from the pan and leave it to rest until the sauce is ready.

How to make black peppercorn sauce without cream

Ingredients

The sauce is super easy to make with just a few ingredients: butter, flour, milk, beef stock/broth and peppercorns.

The right texture for the peppercorns

I don't like using ground black pepper here, as I find the texture way too fine, and whole peppercorns aren't quite right either.

So the answer is somewhere in the middle. If you have a pestle and mortar, just crush them slightly, otherwise, add them to a freezer back, and use the rolling pin to crush them. Again, we don't want them to be crushed too finely, but a bit of texture is just right.

Easy peppercorn sauce for steak

  • in the same pan that the steak was cooked, add the butter and allow it to melt - the butter helps to deglaze the pan and to use those delicious juices left from the steak
  • mix in the flour, and use a whisk to get a lump-free mixture
  • pour in the broth and milk, and continue to mix until the sauce thickens slightly
  • add the crushed peppercorns, and continue to mix for 30 seconds, then remove from the heat

Other steak recipes

Unlike stewing or braising steak that has to be slowly cooked to get a perfect texture, a fillet steak is ready in no time, so it requires minimal cooking.

My Garlic Butter Steak Bites would also go wonderfully well with the peppercorn sauce, and they are as easy to cook in no time in a frying pan.

Ingredients

  • 4 fillet steaks
  • 25 g butter
  • 1 ½ tablespoon flour
  • 250 ml beef broth
  • 100 ml milk
  • 2 tablespoon peppercorns
  • ¼ teaspoon salt
  • 1 tablespoon vegetable oil

Instructions

  • Season the steaks with salt.

  • Heat up the oil, and cook each steak on both sides for 1-2 minutes depending if you like them rare, medium or well done.

  • Remove from the pan and set aside to rest.

  • In the same pan, melt the butter, add the flour and whisk well to get a smooth paste.

  • Pour in the broth and milk, and continue to whisk until the sauce thickens.

  • Add the peppercorns to a zip lock bag, and use a rolling pin to crush them slightly, then add them to the sauce, and give it a good stir.

  • Serve the fillet steaks with the sauce, mash and greens.
